Corvina Fish
Corvina is the Peruvian name for Sea Bass. It is the most popular of white-fleshed seafood used in Peru’s fanciest national dishes. It is perhaps the most iconic of Peruvian fish but is hard to find in markets in the US because it is considered by many oceanologists to be an endangered species. Whatever the case, it is a great and noble specimen of the briny deep.
